Menu development, costing and marketing functions as they relate to the catering department. Implement labor cost control, foods cost control, preparation, transportation, setup, operation and clean up of all events.Additional responsibilities include but not limited to the following:Hire, train and develop managers, and is actively involved in the development of service techniques, menu presentation, policies and proceduresAdditional responsibilities include the reporting of operating statements, reports, and operational budgets, and review of the collection of receivablesResponsible for all catering activities, books, plans & directed functionsResponsible for creating proposals, contracts and banquet event ordersPerforms related duties and special projects as assignedQualifications:Bachelors degreeis preferred or equivalent professional experienceMust have previous catering sales experienceProven track record for meeting sales goalsStrong knowledge of current food, industry trends and fine dining points of serviceA minimum of 3-5 years of experience in hospitality industry including a minimum of 3 years experience in catering salesSupervisory, scheduling, training and coaching skillsAbility to assess client requirements and deliver ensuring client satisfactionMust be able to write menu proposals in consultation with chefsPrepare and monitor budgets; financial targets and forecastsThe ability to supervise food preparation, service and clean up is also essentialMaintain local clients database and build and maintain relationship with new vendorsKnowledge of A/V equipment with the ability to set up and break down for events.Superior quantitative, oral and written communications and problem-solving/strategizing skillsExcellent leadership and organizational skills, flexible and adaptable to constant changes and must possess attention to detailExcellent overall computer skills with advanced knowledge of Excel and PowerPointProactive mindset and able to remain calm under pressure to anticipate and support changes in our business.Conformity to the highest standards of personal integrity and ethical behaviorExceptional client relations and customer service abilitiesEnsure all safety and sanitation procedures are followed in compliance with HACCPGreat People.
